Dates

Dates are fruits of the genus Phoenix Dactylifera, the variety is Sayer. The fruit is collected from the trees harvested when ripe (harvesting does not involve ground collection or drop harvesting methods). The fruit is then laid out for natural sun drying. The resultant product is a "natural condition" uniform brown colour with a typical moisture content of maximum 18%. The whole dried dates are calibrated according to size to give product of uniform colour and size. During this phase, the whole dates will be well cleaned and selected to eliminate dirty fruits, substandard fruits and foreign matter, and is practically free from all internal and external defects.  The product will then be fumigated.

Pitting the Dates… The pitting operation will be carried out by hand cutting the fruits, and without the use of mechanical maceration equipment. This operation includes a cleaning selection again to ensure that all remaining pits are removed and that the product is completely clean.

Chopping the dates…  Chopped dates will be processed and shipped fresh against order.  The pitted dates will be chopped by cutting, and sieving out the smaller pieces (fines). This cutting phase will also include a cleaning inspection of the product for cleanliness and removal of foreign matter. The product is then rolled in high quality rice flour.

Extra cleaning of the chopped dates… After this the product is passed through two separate mechanical cleaning phases of sieving, aspiration, and blowing. It is then cleaned by electronic x-ray inspection and laser sortex equipment. It is then static picked.

A further coat of rice flour added, the product is packed into cartons of 12.5kg net wt., and metal detected. The product is only passed for shipment after passing detailed QC inspection. The product will be fumigated prior to shipment.
