Dates

Close-up of a pile of dried dates with wrinkled dark brown skin.

Dates are fruits of the genus Phoenix Dactylifera, the variety is Sayer. The fruit is collected from the trees harvested when ripe (harvesting does not involve ground collection or drop harvesting methods). The fruit is then laid out for natural sun drying. The resultant product is a "natural condition" uniform brown colour with a typical moisture content of maximum 18%. The whole dried dates are calibrated according to size to give product of uniform colour and size. During this phase, the whole dates will be well cleaned and selected to eliminate dirty fruits, substandard fruits and foreign matter, and is practically free from all internal and external defects.

In regards to pitting the dates, the first pitting operation will be carried out by hand cutting the fruits. This operation includes a careful operator selection.

The second pitting operation will be carried out by maceration pitting of the fruits. This operation is a secondary high standard check aiming to remove any remaining fruit pits and making a product that is completely clean and ready to eat.

In regards to chopping the dates, we have our dates chopped and shipped fresh against our order to maintain maximum softness in the fruit. The pitted dates will be chopped by cutting, and sieving out the smaller pieces (fines). This cutting phase will also include a cleaning inspection of the product for cleanliness and removal of foreign matter. The product is then rolled in high quality rice flour.
