Glace Cherries
We supply traditional glace cherries as well as Morello cherries and Amarena Cherries. These are produced from carefully selected varieties of sweet and sour cherries, harvested at optimal ripeness. The production process begins with removal of leaves, stalks, and thorough washing, usually followed by calibration for size to support highly effective mechanical pitting. Cherries are inspected before and after pitting, with additional operator selection to ensure a very high level of pit removal. Depending on the product type, cherries are infused with sucrose, glucose‑fructose syrup, concentrated fruit juices, and colour and flavours according to the product type. After cooking, glacéing to the required brix level, the fruit is well drained of free syrup, and may be diced, halved, or supplied whole and broken according to specification. Selected products may undergo additional drying or costing with vegetable oil etc. to maintain free‑flowing characteristics.
