Parmigiano Reggiano

Parmigiano Reggiano, is a grana type hard Italian cheese, made from raw (unpasteurised) cow’s milk, partially skimmed by natural skimming, cooked and slowly matured. The cheese is fine grained and flaky in texture.

The cheese is designated PDO (area of Protected Designation of Origin), as defined in the EU Regulation 1151/2012) and is produced exclusively in the defined geographical areas of Parma and Reggio Emilia, all of which are located in the Emilia-Romagna region.

Parmigiano Reggiano PDO undergoes a long natural maturation process, the minimum being 12 months. The shelf life of the cheese is protected while in the wheel as the hard rind forms a strong protective barrier. The cheese can be aged for long periods in this condition.

The product is supplied as portioned (cut). Manufacturing cuts including grated, fillets, cubes and flakes / shavings. The portioned product is finally packed in a modified (protective) atmosphere into food grade bags in cartons and metal detected.
